Adrian's Cinnamon Rolls
Served with And There Was Light
Bun
1 cup water
1 pkg (2 1/4 tsp) yeast
4 cups flour
1/4 cup margarine, softened
1/3 cup sugar
1 egg
1/2 tablespoon salt
Cinnamon filling
3/4 cup brown sugar
1/4 cup butter, softened
1 tablespoon cinnamon
In large mixing bowl, sprinkle yeast in 1 cup of warm water with 1
teaspoon of sugar, mix and let sit 10 minutes. Add 1 cup of flour and
beat well. Let rise until spongy (30 minutes).
In a small bowl, mix sugar and softened margarine until very creamy.
Add beaten egg and beat until very well blended. Add salt.
Add egg mixture to sponge mixture. Add 1-2 cups flour and beat till
smooth. Continue adding flour (1 more cup) beating with a wooden
spoon. When it is hard to stir put the rest of the flour on a board
and put the dough in the middle and knead. Put the dough in a warm
oven and cover with a damp cloth. Let rise until doubled (about 1
hour). Grease pans and prepare them for rolls. Punch down dough and
let rise 1/2 hour more.
Mix together butter, brown sugar and cinnamon. Roll dough into 1/4"
thick rectangle. Spread cinnamon mixture over dough. Roll up jelly
roll style, pulling to stretch dough while rolling. Cut roll into 1"
thick slices. Place in pan almost touching and let rise one last time
(about 30 minutes). Bake at 325-350 for 20-25 min.

4 oz cream cheese, softened
1/2 cup butter, softened
1/2 tsp vanilla
1.5 cup powdered sugar
1/2 tbs milk
