Adrian's Peanut Butter Magic Cookies
Served with The De-Voicing of Society
Filling:
3/4 cup peanut butter
3/4 cup powdered sugar
Cookie dough:
1/2 cup sugar
1/2 cup brown sugar
1/2 cup margarine or butter, softened
1/4 cup peanut butter
1 tsp vanilla
1 egg
5.5 oz (1 1/4 cup) unbleached flour
1.5 oz (1/2 cup) cocoa
1/2 tsp baking soda
Combine filling ingredients and blend well. Form into small 1-inch
balls. Set aside.
Cream together sugars, margarine, and peanut butter until light and
fluffy. Beat in egg and vanilla. Stir in flour, cocoa, and soda.
Dough should be very soft.
With floured hands, take about 1 T dough and wrap it around a peanut
butter, covering it completely. Roll the ball in your hands to smooth
it. Place balls 2" apart on an ungreased cookie sheet. Flatten them
with the bottom of a glass dipped in sugar.
Bake at 375 for 7-9 min or until set and slightly cracked. Cool on
wire racks. Yields about 30 cookies.
