Joni's Spinach Quiche
Served with The Wisdom of Crowds


Crust:

1 1/5 cups unbleached white flour
1/2 tsp salt
8 T butter
1/4 cup ice wa pinch of sugar

Combine dry ingredients in food processor. Add chilled butter that has been cut up into pieces. Blend until it looks like very coarse cornmeal. Add water (slow is better) and process until it just comes together. You will have to mush it together by hand at the very end. Wrap in plastic and chill for 2 hours.

Roll dough out and place in pie plate and let rest for 1/2 hour (in the fridge I guess? I skipped the resting stage and I think I paid for it.). Cook pie crust for 10-12 minutes at 400.

Filling:

3 eggs
1 1/2 cups heavy cream
1 package frozen spinach (cooked and squeezed dry)
about 2 oz of gruyere, cut up into chunks
salt (which I forgot but it needs)

Lightly beat eggs. Add the rest of the ingredients. Pour into prepared crust and bake at 375 for about 45 minutes.
