Source: Email from Doug Simon Ingredients: 1 tsp fennel seeds The recipe I was given used water for the remaining liquid but I like to substitute that with a bit of white wine (it makes a difference psychologically at least!) Fry onion and fennel seeds in oil until onion is starting to brown. Add rice and cook until some of the rice starts to brown (no more than 2 minutes I think). Add stock (and wine) and just keep adding more liquid until rice is pretty soft. Add mushrooms and lemon juice to taste and finally cheese (whatever amount seems right). |
